Everybody loves a cake, but it is not the healthiest thing to be regularly having. With a cry fruit cake, you can at least get an alternate way to enjoy a cake regularly, which is also healthy. By replacing eggs with a combination of condensed milk and baking soda, you can make an eggless cake for a vegetarian diet. But for today, we’ll have a look at a complete recipe, the way it is traditionally made.
The recipe we’ll discuss today only uses a few ingredients and is perfect for making for people looking for an easy and quick cake recipe, not to mention healthy. You can have this cake made in a larger quantity which you can later cut and store in airtight containers for your guests to enjoy.
Ingredients
- 2 cups all-purpose flour (maida)
- 1 tsp baking powder
- 2 pinches of nutmeg powder
- 2 eggs
- 1 tsp vanilla extract
- Boiling water
- 1 ¼ cup of dry fruits
- ¾ cup granulated sugar
- ½ cup butter
- ¾ cup milk
- ½ cup sour cream
Recipe
Step 1: Soaking the Dry Fruits
For the first step, we need to prepare the star of the recipe; the dry fruits. Take a 1 ¼ cup full of your favourite nuts and dry fruits. These could include cashew nuts, almonds, raisins, pistachios, dates, walnuts, dried apricots, etc. Now, in this bowl of dry fruits, pour some boiling water so that everything is soaked. Allow them to soak for about 15-20 minutes.
Step 2: Prepare the Baking Tray
Prepare the baking tray by spraying a layer of cooking oil on it. Then add some non-stick foil on the surface. You could also use parchment paper which allows you to remove the cake with ease. Preheat the oven to 180 degree Celsius. Now we can start preparing the batter in the meanwhile.
Step 3: Whipping Up the Batter
This step will be done in two parts. First, we’ll make the liquid mixture in which all the wet ingredients go, and separately we’ll make a dry mixture of the flour and everything else. Then we’ll combine the two together.
- In a bowl, crack 2 eggs and whip them up. Add sour cream, milk, melted butter, and villa extract to it. Whisk all of it together until you get a smooth mixture.
- In a separate pan, add the flour, nutmeg powder, salt, granulated sugar, and baking powder. Mix all of it together well.
- Slowly, add the wet mixture to the dry mix. It is suggested to sieve the entire dry mixture once to make sure no lumps are remaining. As you add the wet mix, whisk gently, making sure you cover the whole combination.
- Once you have a smooth batter, add the soaked dry fruits and mix with a spoon or spatula.
Step 4: Baking!
Carefully transfer the mixture to the baking pan lined with foil. Knock it a few times to make sure the batter settles and is level with the baking pan. Put the tray in the preheated oven and start baking. Bake the cake for about 25-30 minutes. To check if it is fully done, insert a toothpick in the centre of the cake. If it comes out clean, the cake is made.
Have this cake immediately when it is warm for the best taste. You can also cut into pieces and store them for later and have with your tea or coffee in the evenings to follow. You can also add chocolate syrup or your favourite frosting on top of it to have the perfect caking experience!
