A creamy bowl of delicious ice cream is all one needs to lift one mood when the sun outside is beating down hard. However, health-conscious people try to avoid something fattening like ice cream. So today, we’re discussing a recipe for ice cream using figs that you can make at home!
The satisfaction of having a bowl of ice cream you made yourself is just irreplaceable. Anjeer ice cream is a famous option for diabetic people in India looking for a sugar-free substitute for regular ice cream. Figs are natural sweeteners themselves, so it doesn’t take a lot of sugar to make this ice cream. To add more texture to it, you can add your favorite dry fruits and resins.
This added texture will make this ice cream all the more exciting and delicious. We are using full-fat cow’s milk for this recipe and avoiding condensed milk by adding milk powder for the creamy texture. So let’s begin with rounding up the ingredients!
Ingredients Required
- ½ cup dried figs (use fresh figs if you can get your hands on some)
- 1 ¾ cup cow’s milk
- ½ cup powdered sugar
- 2 tsp milk powder
- A bowl full of your favorite nuts and dry fruits
Recipe
Step 1: Prepare your Dry Fruits
As the first step, we should roast our dry fruits so that they provide that nutty texture. Recommended nuts include cashews, pistachios, and almonds. Some raisins also add some charming flavor. As a bonus tip, roast your almonds with honey. It gives them an impeccable taste.
Step 2: Prepare Figs
If you’re using fresh figs, they are already good to go. But if you’re using dried figs which are more likely, you will have to re-hydrate them. For that, combine ¾ cup of milk and the figs in a broad non-stick pan. Mix them thoroughly and keep stirring consistently. Cook this mixture on a medium flame for 6 to 7 minutes.
Step 3: Make the Ice Cream Mix
Once the mixture cools down, blend it into a smooth puree. Transfer this mixture to a deep bowl and add the remaining one cup of milk to it. Whisk it well, adding the powdered sugar and milk powder. Separately, grind your nuts and raisins into coarse little bits and add them to the mix.
Step 4: Setting the Ice Cream
This is a two-part process. First, we have to transfer the mix into an aluminum container and freeze for about 6 hours till semi-set. It must be a shallow container so that the thickness of the ice cream is easier to set. A round container is recommended.
Once the mix is semi-set, take it out of the freezer, blend it again, and pour it back into the same shallow container. This time we have to let the ice cream fully set. Cover it with aluminum foil and freeze for about 10 hours.
Step 5: Enjoy your Healthy Ice Cream!
Once set, take it out and enjoy with your favorite toppings! You can pour a sweet glaze or chocolate syrup on top of it. You can also have it as it is, as the recipe is delicious on its own! Sprinkling it with nuts will give it a lovely garnish.
