Khajur Barfi or Dates and Nuts Roll is a healthy and delicious treat without any refined sugars. The dates and raisins are enough to sweeten the recipe, with the nuts adding earthy flavors and some crunch to it. Another trick is to add some apricots and figs as well, but for this recipe, let's stick with the dates for now.
This recipe isn't as time taking as it may seem. All you need to do is chop the nuts using a food processor. You can add or subtract nuts and dry fruits according to your preference and availability. Once you have everything ready, the preparation of this recipe takes only 15 minutes, excluding the setting time it takes in the fridge. This dry fruit roll is a healthy recipe with lots of benefits like help you fight heart disease, improving your digestive system with the added fibers, and also at the same time help you burn some fat and calories.
Here is the list of ingredients you'll require
- 3 cups deseeded dry dates (preferably sweeter and softer)
- ¼ cup desiccated coconut
- 5 cup assortment of nuts (any combination of almonds, pistachios, cashews, pecan nuts, brazil nuts, and walnuts, chopped finely)
- ¼ cup of raisins
- 1 tsp ghee
- 1 tsp poppy seeds
- ¼ cup finely chopped green pistachios for garnishing
Recipe
Step 1: Deseed the dates first and chop them into small pieces. If you like having chunkier bits in the middle of your dessert, it is up to you to tweak the size of your dry fruits.
Step 2: Finely chop all the nuts that you have selected. You can either take your time and make sure that the chopping is consistent if you're patient, or you could use a food processor to chop the nuts. Just make sure not to turn them into coarse powder.
Step 3: Heat up a pan. A cast-iron skillet works perfectly for this process. In this step, we have to lightly roast the desiccated coconut. You just have to roast it till it's light brown.
Step 4: Now is the time to use the same heated pan and roast the chopped nuts. Roast all the nuts either together or one by one based on their individual firmness. After the nuts are roasted and give off the pleasant roasted smell, take them off and separate them in a plate or bowl.
Step 5: Heat up a bigger kadhai and add ghee to it. Once the ghee is heated up, add the poppy seeds and wait for them to crackle.
Step 6: Now, add the chopped-up dry dates to the kadhai. This is the process that might be the most time taking. Cook the dates on low flame till they melt and turn into a lumpy sloppy mess. This softened up date paste is what will be the base of our dessert.
Step 7: Add the roasted dry fruits in this step. You also have to add the roasted coconut and give it all a quick mix.
Step 8: Switch off the gas and wait for the mixture to cool down for 5 minutes before we start shaping it, garnishing it, and then cut it into pieces.
Step 9: To garnish, shape the entire mix into a rectangle or a roll, depending on our preference. Add crushed poppy seeds and pistachios on butter paper and coat the entire block or roll with the nut mix.
Step 10: Refrigerate the entire roll and wait for it to firm up. After that, take it out and cut it into cross-sectional pieces of your preferred thickness. Enjoy your dessert!
